Chicken
6 to 8 chicken pieces
flour, salt, pepper
1 onion, chopped
1/2 cup frozen orange juice concentrate
1/4 cup white vermouth, wine, or orange marmalade
3/4 lb. fresh green beans
orange slices
chopped parsley
Lightly coat chicken with flour. Sprinkle with salt and pepper. In a large heavy skillet, melt butter. Brown chicken on all sides, pour off fat.
Stir in onion, orange juice and wine or marmalade. Cover and simmer for 10 minutes. Add green beans; cover and cook for 8 to 10 minutes or until beans are tender.
Spoon chicken and beans onto a hot platter. If sauce is too thin , boil until it thickens; pour over chicken.
Garnish with orange slices and chopped parsley.
